240 grams Rolled oats
1 tablespoon Coconut oil
360 milliliters Almond milk
1 Medium Egg
1 tablespoon Cinnamon
1 teaspoon Baking Powder
1 teaspoon Vanilla extract
80 grams Raspberries
45 grams Pomegranate
30 grams Pumpkin seeds (optional topping)
1 scoop Vital Proteins® Collagen Peptides
- In a food processor, combine all of the ingredients and blend until smooth.
- Add the coconut oil to a frying pan and cook over medium heat.
- Scoop in about around a quarter of the mixture and cook the batter on both sides for up to 5 minutes.
- Repeat with the remaining pancake batter, then remove the pancakes from the pan, finish with your chosen toppings and enjoy.
